What Jean-Philippe says about his cidre:

 

The cider I make is completely traditional and natural. It is produced with apples characteristic of southern Morbihan. They come from old orchards within a 15km radius of the cider house (some apple trees are over 50 years old). No pesticides or anything else; the trees grow and produce their fruit naturally. It is certified Organic. The apples are picked when ripe, then aged to allow time for the aromas to develop. And are pressed in a bale press (from 1946!). The juice is fermented (ferments naturally present on the apples, no additives). Fermentation is carried out in the cellar for several months without the addition of chemicals or other products. When the cider is ready, it is bottled without filtration; the foaming occurs naturally in the bottle (no pasteurization, no CO2). Given the method used, my cider therefore has a slight sediment at the bottom of the bottle and it will continue to evolve slightly over time.
